What kind of bike are we talking about? Are you using the clutch at all?

You really shouldn't ring out your engine with no load on it. let off the gas a little while shifting and then use the clutch to get it back up into the revs. It should all take less than half a second.

I wouldn't, during that brief period with full throttle and clutch in, the rev's can sky rocket (because you are already at hi-rev's and full throttle when you pull the clutch).
I bet you wouldn't see any loss in acceleration if you back off a bit when you shift.

It's not as bad as if you did this to a 4-stroke, but it's not good either.. I would personally never shift my bike like this. It's hard on the gear dogs, it's hard on the crank as well... at those high rpm's oil is being flung out of the bearing, and overrevving it at high load isn't going to work out very well for the bottom end in the long run..

i just let off the throttle for a split second and finger the clutch if the revs drop too low.

It's always a good idea to let of the gas alittle then clutch shift. As bill said this should take no more then a sec. And on a up hill if your not at the right rpm range and have it open and shift you risk the chance of wheeling and losing traction from spin. A smooth clutch release will keep you in the rpm's and in the traction. Just my opinion and what i do.

I disagree. I can actually hear the difference between a Gibson and an Epiphone. But the biggest difference is in the feel of the guitar. Everything just feels perfect on a Gibson. JMO.
