What's the best to use? Everybody'a always like "you need to lube your chain," but I'm not really sure what type of stuff to use, how to apply it, etc.

i use maxima chain wax. it's a *** to clean off i just spray my chain with wd-40 and do a couple laps on my oval to break up all the dirt on the chain. then i spray it again to get all the water out of the little crevices.

That's a loaded question in which you will get a lot of answers:
Here is what I am currently using http://www.amsoil.com/storefront/amh.aspx

In the past few years I have also used the following all with good results but different issues:

The chain waxes seem to take a while longer to start lubing the chain and there is the overspray issue it can get all over the swing arm also at times the sand seems to get trapped more with the waxes.  They are really good for long rides.  Maxima Chain wax has been my favorite of these for many years.
I like the non wax for shorter riding application like motocross where you want maximum lube from the start but will be able to relube on a regular basis.  I tend to get more black fender fling off with these than the waxes but I don't collect as much sand and dirt on the chain.  All the non waxes are good the foaming lubes seem to fling off more and leave a thicker coat than the lighter sprays like the HP.

Honda prolube

PJ 1 Black lable

You can't go wrong with any of these just think of your type riding to get the most benefit from your chain lube.

We have been using Castrol Chain Lube...but it sucks! Our chains are showing signs of rust, and it doesn't stay on at all. And with the amount of mud and water we go through in a ride, we need something better.

My uncle uses the PJ1 black label, all though, I think his is clear. In our Honda manual is says to use gear/chain wax. Or something like that, so for next season, were going to try and find some of that stuff, and see how it holds up, since it will be thicker.

What i use

Thought it would be a good lube since it's from bel ray. Today was the 1st time i used it. so i can't tell if it's any good yet. It didn't look as if it got flung off alot really.

I use Maxima Chain Wax as well for a number of years.  I have also used Bel-Ray but it seems to develope a buildup thats hard to get off (but also seems to work well).

When washing the bike, I also use some simple green and a brush to clean the chain.  I then spray some WD40 to help finish cleaning it and disperse water and wipe off, then follow up with the chain wax.
